Pizza Sauce

This pizza sauce is not for the faint-of-heart.  Together with my sourdough pizza dough, this'll make a wonderful homemade pizza.  It's especially fun to when you let your kids or grandkids select and apply the toppings...

Although you can bake your pizza in the oven, I prefer to use a grill--as it's more rustic!

Ingredients:

Place the oil in a skillet on medium heat.  When the oil begins to look transparent, add the garlic and stir for a minute until lightly brown.  Now add the pepper flakes and other spices.  The purpose of the oil and spices are to make a flavored oil, so don't get carried away by adding things in an ad-hoc manner.

Once the herbs & spices have absorbed as much of the oil as they will, add the crushed tomatoes and sauce. Reduce heat to medium-low and stir every 5 minutes or so (it's the gentle simmering and constant stirring that are at the heart of making a great sauce).  Although I like the chunks, you might want to break apart any too large tomato chunks as you’re cooking down the sauce.  Cook slowly for about an hour and put aside to cool.

Use directly, or make ahead and freeze until needed.
