Orange-Chili Fish

How I cook is as important as what I cook.  I work only with fresh, natural ingredients.  We like our veggies whole, natural and fresh.  And that goes for fish as well.  This is a quick and easy recipe for a tasty fish meal for 4.

Ingredients:

Combine the orange juice, cilantro, olive oil, garlic and chipotle.  Place the fish in a non-reactive dish and cover with the marinade.  Refrigerate for at least 1 hour. 

Remove the fish from the marinade and place directly on the grill over medium heat.  Alternatively, for indoor cooking, put it on a plank or a rack set into a baking pan or on a broiling pan in a 450F oven for about 12 minutes per inch of thickness.
