Mediterranean Chicken Salad

Those of you that know how I cook, know that I work only with fresh, natural ingredients.  This is an easy to make recipe that makes an interesting and refreshing lunch or dinner on a hot summer day...

Ingredients:

Combine oil, vinegar, tarragon, lemon juice, and mustard in small bowl.  Whisk to blend.  Season dressing to taste with salt and pepper.

Place chicken in a large salad bowl.  Pour in about 1/2 of the dressing, toss gently to coat.

Cook Orzo or other pasta (I like Rotini, but it requires a bit more dressing) in large pot of boiling salted water until just tender.  Drain, and rinse under cold water to cool.  Drain well.

Add pasta to the chicken mixture.  Pour the rest of the dressing over the pasta; then add tomatoes, artichoke hearts, olives, currants, and capers.  Toss to coat, seasoning with salt and pepper if needed.  Serve immediately.
