Chicken

We cook most everything we eat on the grill, and this is the simple thing we do to our meats.  We use this basic recipe for most every meat:  chicken, fish, beef, ...whatever. 

Preheat the barbeque grill.  Do what's necessary to clean up any amount or cut of chicken.  Coat it liberally with olive oil, sprinkle on salt (coarse grained Kosher is best), cayenne pepper, granulated onion, granulated garlic, and paprika.  Adjust the cayenne to taste.  We like it spicy.  Throw it on the grill.  START OUT MEAT SIDE DOWN (skin side up). 

Set your temperature control to it's lowest setting.  Turn every 10-minutes.  Do this-4 times (total of 45-50 minutes).  Depending on how hot your grill is and how thick your chicken parts are, that should be enough.

I prepare the pieces SKIN SIDE DOWN on the work surface as I dust on that first layer of spices.  Then I put the chicken on the grill SKIN SIDE UP, and once they're all down, dust the skin side with the salt & spices.

We like to eat simple meals.  Mostly we make a huge salad and/or our braised vegetables to go with the meat.  Our favorite is what's known as "spring mix", dressed with salt, olive oil, and lemon juice.  To that I may add fresh chopped pineapple, or tomatoes, or apples, or oranges, or mandarin oranges (our favorite).  You can toss in some nuts, pine nuts, chopped walnuts, chopped pecans, or cashews.

Our most favorite chicken meal, served nearly every Friday on "family day" is; the chicken recipe above, beans, and salsa, with flame-roasted tortillas!  Given the great company we are to each other, dinner simply doesn't get any better!

Add a glass of wine or beer; and it's dinner!
