BBQ Sauce

Mmmmm…BarBeQue sauce!  Nothing evokes more emotional involvement in food than a good, flavorful, spicy, silky fine barbeque sauce.  Since I don’t like to buy things with ingredients that I can’t name, I make my own.  I hope you enjoy it as much as I do…

NB:  This recipe also makes ketchup, BBQ, or cocktail sauce.  Above the line makes ketchup, add the part below the line and you’ll get BBQ sauce, and below that you get cocktail sauce.  I made it this way because the basic ingredient in most BBQ sauce or cocktail sauce recipes, is ketchup.

Ingredients

8 oz.

29 oz.

Can of plain old tomato sauce

1/4 cup

1 cup

Brown sugar

1 Tbsp

1/4 cup

Cider or malt vinegar (or lemon juice if you prefer that taste)

1 tsp

2Tbsp

Salt

1 tsp

2 tsp

Minced or powdered garlic

1/4 tsp

1 tsp

Ground allspice

1/4 tsp

1 tsp

Ground cloves

1/4 tsp

1 tsp

Ground mustard

1/8 tsp

1/2 tsp

Ground mace

1/8 tsp

1/2 tsp

Ground cinnamon

ß Add these to make BBQ sauce ß

1/2 tsp

1.5 tsp

Ground cayenne pepper (to taste—I triple that)

1/2 Tbsp

1 Tbsp

Chili powder (to taste)

1 Tbsp

2 Tbsp

Worchester Sauce (to taste)

 

 

ß Add these to the "Ketchup" recipe to make Cocktail sauce ß

2 Tbsp 1/2-cup Freshly grated horseradish
1 tsp 1.5 Tbsp Fresh lemon juice

NB:  If starting from raw tomato sauce, add a bay leaf during cooking.

Combine all of the ingredients and store in the refrigerator until ready for use.

Amounts listed are for your standard 29 oz can of tomato sauce (US).  You can use puree, paste, or make your own sauce as well, just adjust the liquid to get the density you like.  This recipe makes a thick “clingy” sauce.  I find it wonderful on most meats, especially my spareribs!
