Marinated Artichoke Hearts

Those of you that know how I cook, know that I work only with fresh, natural ingredients.  In addition to making a delightful and tasty snack, this process is both easy and rewarding.

Ingredients:

Remove the outer leaves from your freshly cooked artichokes.  Gather them up and put them in a plastic bag.  They can be eaten later chilled or reheated.  Serve them with a my yummy Aioli Sauce.  Remove the flower part and trim as desired.  Depending on their size, you can leave them whole, or halve or even quarter them by cutting vertically through the stem.

Mix together wine vinegar, oil, garlic and parsley.  Add artichokes.  Make sure to get the marinating liquid on all surfaces.  Stir, cover and refrigerate.  Allow to marinate at least 24-hours; 48-hours is even better; stir occasionally.  These artichokes will keep at least several weeks or more in the refrigerator.
