1½ lbs Cooked chicken (preferably breast, preferably roasted)
8 oz Bean Threads (or Chinese noodles; e.g., Chung-King)
1-2 small Heads iceberg lettuce shredded
6-10 Stalks green onions, sliced thin
5-7 tbsp Chopped toasted almonds (and/or)
5-7 tbsp Toasted sesame seeds
1 cup sesame oil
1 tsp Salt
1 tbsp Sugar (heaping)
1 cup Balsamic vinegar (or ½ - ½ lemon juice, I like more)
1 cup Soy sauce
1 tbsp hot oil (or sesame oil and a few dashes of hot sauce)
4 tbsp Fresh garlic, chopped or crushed
Only mix and prepare as much noodles as you need, otherwise they get soggy!
