LEMON CURD

A wonderful neighbor lady used to make this ambrosia from the trees that separated our yards.  Although she's no longer with us, her recipe has endured.  You'll find this heavenly lemon spread simply delicious on toast, plain buttered bread, pancakes, or my personal favorite, English muffins.

You can also use this as an elegant pudding-style desert if you blend it with approximately equal amounts of of whipped cream.

Using a double boiler, stir until well blended and it begins to thicken.  This should take only a few minutes.  Don't over-cook, as it will continue to thicken as it cools.  Pour the fresh, hot lemon curd into hot, sterilized jars and seal.  It can also be refrigerated or frozen
