Khoresh Ghaimeh

This is a mildly spicy meat dish suitable for stuffing into a flatbread, or serving over rice.

Makes 6-8 servings.  Takes about 2-1/2 hours to make.

If using dried split-peas, soak in warm water for 2-3 hours, drain.

Chop onions and sauté in oil until just golden.  Cut meat into small pieces and add to onions until color changes.  Add 24 oz. of of water or broth and bring to boil.

Simmer for 1-1.5 hours, adding water as needed.

Add split-peas, salt, pepper, spices and tomatoes and continue simmering until cooked.  Add more water if needed.

Add lime juice just before serving.  Adjust seasoning according to taste.

Serve with Jasmine rice, flatbread, or any other base.
