Za'atar Mix

This is how to make the "Za'atar" (zah'-ter) mix.  Za'atar is both the name of a wild mid-eastern herb, and is also given to the mix that bears its name.  The mix, is a mild yet flavorful blending primarily of herbs, olive oil, and lemon juice.

Makes 2-3 cups.

Ingredients:

Preheat the oven to 350°F.

Toast sesame seeds on a cookie sheet or pie plate for 5-6 minutes or so.

Combine thyme, sumac, salt, and sesame seeds.  If desired, may be ground into a fine powder in a spice mill.

Store in an airtight container for up to 4 months.  May be refrigerated.

Usage:

Thin with olive oil and brush on lamb ready for the grill.

Mix in some yogurt and a bit more olive oil and use as a dip for fresh, hot pita bread.

Spread onto flatbreads, before baking, for a truly magnificent taste!
