Often referred to as "Spanish Rice" this easy recipe is a Mexican staple that accompanies most every meal. How I cook is important to me, and this recipe fits my requirements perfectly.
Heat the oil in a large frying or saucepan over medium heat, and add the rice.
Cook, stirring constantly, until just lightly golden.
Stir in the onions and garlic. Add the salt, chili powder, cumin, tomato sauce and broth.
Bring to a boil. Reduce heat to low. Cover and simmer for 20 to 25 minutes. Fluff with a fork just before serving.
This rice goes well with most Mexican recipes on this site.
