This recipe is an adaptation from Ed Woods SD book, "Classic Sourdoughs"
(which I highly recommend), to my methodology. I can only hope that I've
not butchered Dr. Wood's recipe into uselessness...
Ingredients:
- ½-cup cold liquid starter culture
- 2-cups water
- 6-cups flour
- 1½-teaspoons salt
Method:
- Mix the starter with 1-cup flour and ½-cup water in a large mixing bowl.
Proof 12 hours at RT (68-72F) or 6-hours at 85F.
- Mix in 1-cup flour and ½ cup water. Proof 8-hours at RT (or 4 at
85F).
- Dissolve salt in remaining 1-cup of water and mix into the sponge.
Mix in 3-cups of flour, reserving the final cup for the board.
- Form into loaves. Place into COLD OVEN
to proof for an additional 3-5 hours (or more).
- Set oven to 375F, and bake
for 45-50 minutes.
NB: For more soured bread, repeat step #2, adding another 1-cup of flour and
½ cup of water.
